Pesto Penne Recipe

Ingredients:

2% reduced fat milk

100% whole grain penne pasta

salt

pepper

garlic (to your desire…I use 3-4 cloves)

broccoli

1 chicken breast

pesto

2 tbsp olive oil

2 tbsp margarine

3 tbsp Parmesan

Boil a large pot of water and throw in a dash of salt. Cook the pasta for about 11 minutes or until done.

Trim off any excess fat on the chicken breast. I like to put the cut up garlic on the breast as I cut it into small pieces.

Saute the chicken and garlic in the olive oil and butter until almost cooked.

Reduce the heat: add salt, pepper, milk, & pesto

Stir, cook until done. Add the broccoli (and optional: heat it very lightly to keep a fresh balance!)

Sprinkle Parmesan cheese to your desire per plate.

**I recommend having a salad and some cooked zucchini along with the pasta to balance it out.**
